...thoughts of summer...

It is snowing outside my window...snowing. I know that this causes angst for a lot of people. Other than slowing me down on the commute I actually don't hate it. I'm just enjoying a last chance to wear boots and coats and hunker down inside, listen to the rain and wind and think about all things lumberjack (plaid, flannel, trees, rivers, pancakes...lumberjacks get all the good stuff!).

It's not a secret that I'm not a summer person. I'm not built to handle the heat. I melt in the summer. I stay indoors between the hours or 11:00am - 3:00pm at all costs. It's just the truth.

That doesn't mean I don't love some things about summer. I love the summer outings, walks, and possibilities. I love summer nights. Outdoor concerts, celebrations, farmers markets, and fireworks. I love vacations.

So in honor of the impending summer... I made a cake. A delicious raspberry and peace cake. It tastes like the fourth of July...in fact, I think I'll make it on the fourth of July. And I'll serve it on this awesome vintage tablecloth that I found a few months back. See...summer isn't do bad! I'll just buy more sunscreen! But don't forget to enjoy the snow while it lasts!

Recipe found here on Seven Spoons. Enjoy!

That looks delicious. If you find any good farmers markets in SLC, let me know. I'm on the lookout!
