...caprese omelette...

I think for most people the staple foods in their house are bread, milk, eggs, etc. Simple things like that.
For some reason the staple items in my house lately are tomatoes, fresh basil, and mozzarella. I'm probably obsessed with Caprese salad. Caprese salad is a basic Italian salad made of tomatoes, basil, mozzarella, and seasoned with salt, pepper, and olive oil. It's simple an delicious. Use large slices of tomato and cheese, shred the basil on top and drizzle with olive oil (and balsamic vinegar for the brave). Give it a try.
The other staple that I have in the house is eggs. By default one day I try Caprese omelettes! I think it's pretty self-explanatory but here's the gist:
I used olive oil in the pan before the eggs. For toppings I used diced tomatoes, shredded mozzarella and some fresh basil cut lengthwise (or basically shredded if your knives are as crappy as mine). Season with salt and pepper and enjoy!
And I do enjoy!
